Here's my first recipe. It was amazing! I made it for 2 people so multiply accordingly.
1 lbs. deveined, raw wild caught shrimp
1 lime
1/2 cup chopped, fresh cilantro
4 cloves of crushed, fresh garlic
Salt
Pepper
2 tbsp of olive oil
3 cups of fresh green beans
Sauté the shrimp in olive oil for 2 mins. Season with salt and pepper. Flip the shrimp and add garlic, salt and pepper. Sauté for another 2-3 mins. Remove from heat and add lime juice then toss in cilantro. Serve hot.
Cook green beans for 10 mins in 1/2 cup of water. Add salt, pepper and garlic. Cover for 6 mins then cook until the water evaporates.
Serve and enjoy!
Forgive my photography skills.

A step towards a healthier life.
As of last Saturday, I have taken on Advocare's 24 day challenge. I am just winding down day 6. I can't believe how great I feel. As I have embarked on this journey, I'm realizing more and more how much I love to cook. I always had a passion for cooking when I was younger; however, as life got more hectic the cooking became less frequent. Chris and I have dedicated 2 nights a week for preparing our meals. When we first decided to try out the paleo lifestyle we knew it was going to take some dedication and quite a bit of time needed to be set aside for preparation. We had no idea how much fun we would have and how much closer it was going to bring us. Having an eight month old in the house it has become challenging to fit in time for just the 2 of us. This has kind of become our alone time together and I had no idea how much enjoyment we would get out of it. We really get the chance to work as a team and set up a preparation system. Before we knew it we were laughing hysterically at each other and a few food fight might have taken place. The reward of our "hard work" has paid off in so many ways: together we are taking a step towards making our lives healthier together while enjoying each other company in the process.
Chris is a great cook, but he's also a picky meat and potatoes type of guy. So we've had the chance to put our brains together and figure out alternative recipes that would fit into the paleo criteria. As time goes on, I will be sharing some of our favorite recipes that we have put together. I already have a few that I will be posting within the next day or two. Keep checking back for more updates.

Mr. & Mrs. Griebling
We did it! We took the plunge and walked down the aisle to become Mr.& Mrs. Griebling. Neither one of us were in a hurry to get married. The commitment has been there since the begining and we felt like it was just a piece of paper; in our minds, we had already dedicated ourselves to each other. However, we went on our first offical date on 12-12 and as the date started to approach we had laughed and joked about getting married on 12-12-12. After talking about it for a while we decided that being in Las Vegas and trying to get married on that date with half of the world just wasn't worth the headache. Fast forward to Monday morning December 10,2012. Chris has decided that we were getting married and we weren't going to let any obstacle stand in our way. He said we had conquered so much already that pulling off a wedding in 2 days would be a walk in the park. I was so taken back and caught off guard that I immediately jumped out of bed screamed, "Yes!" And off we went to get our marriage liscense.
There is no way we could have pulled this off if it wasn't for our amazing friends and family members. Everyone jumped right up and didn't miss a beat. Emails were being sent, directions were being drawn up, orders were being placed, and dress shopping was under way. This was truly meant to be. I believe that god made miracles happen in those two days that normally take months and weeks to get done. He was on our side and we felt it more than ever.
The first dress shop we went into laughed when I told them when the wedding would be (this happened alot within the two days). I told them what I would like my dress to consist of and they picked about 5 dresses that they thought would be fitting. First dress I tried on fit perfectly and had all the elements I wanted in a dress. "Perfect, I'll take it wrap it up. We've got things to do." The room was silent. Everyone was in shock over how well it fit and how quickly I was able to find one. We were there a total of about 20 minutes. Luckily, everything to follow went just as smoothly.
We want to thank everyone who helped out and everyone that was able to make it. You helped make our special day just that much more amazing! From the bottom of our hearts, we thank you. It was a day we will always remember and always cherish. It blew our expectations out of the water.
